8 oz meat (beef, turkey, pork, etc ground up)
1.5 cups bisquick baking mix
1/4 c grated parm cheese
1 tsp italian or pizza seasoning
1 tsp dried parsley flakes
1 tsp dried onion flakes
1/4 c chopped green bell pepper
3/4 c chopped tomato
1/3 c shredded cheese (i used colby jack cuz thats what i had open)
1/3 c skim milk
1 egg
2 tsp veggie oil
preheat oven to 375*F. spray wells of muffin pan with cooking spray or use liners. in a large skillet, brown meat. set aside; let cool meanwhile in a large bowl, combine baking mix, parm cheese, pizza seasoning, parsley flakes, and onion flakes. stir in green pepper, tomato and cheese. in small bowl, combine milk, veg oil, and egg. mix well to combine. add to baking mix. mix gently to combine. fold in cooled meat. fill wells with mixture (full). bake 16-18 minutes till toothpick comes out clean. let cool.
EAT!!!!
if you're TJ, you smother with hot sauce, then eat.
notes: i also added mushrooms, fresh, de-stemmed. it was yummy.

making up food pt 2
so i had some grilled chicken tenders that were left overs...
TJ and i saute'd some onion and green and red pepper and garlic and added the chicken and some cheese and rolled it up in tortilla's and YUM!!!!

chicken enchiladas
So, it looks like i'm gaining another (male) housemate. D said theres too much estrogen in this house, so it *obviously* wouldn't be a female :P his name is A and he's 26. :) he'll be the oldest, not me...yay!
so i made chicken enchiladas for dinner tonight, A stayed and enjoyed dinner, we went to go take pics of TJ's car cuz someone ran into him, and then wandered home depot w/ C :)
Chicken Enchiladas
16 flour tortillas
3 c chopped chix or turkey
2 c sour cram
2 c shredded cheddar cheese
SAUCE:
1 tb oil
1 med onion, chopped
1-2 tsp chili powder
29 oz tomato sauce
1/2 c water
salt to taste
Combine chicken, sour cream and 1.5 c cheese.
Fill tortillas with 1/4 c mixture and roll
Place in 9x13 pan and bake for 15 minutes at 350*F
Sauce: Saute onion in the oil. add lil garlic if
wanted. add rest of ingred and simmer till thickened.
pour sauce over tortillas and sprinkle w/ rest of
cheese. put back in oven for 2 min, til cheese
is melted.
1) i didn't use cheddar cheese, i used mozz, annd you cannot tell :)
2) i didn't have 2 cups of sour cream, only 1, and it could use more, but its not bad :)
3) i added garlic, about 3/4 tsp or so, i didn't really check :)
4) TJ cannot wait to come home from work and eat some, its one of his favorite meals that i've made so far. :)
It was good, not many people have had some, B (who spends a few days every month) eats only pizza (seriously! i've never seen him eat anything else, and i dated him for a month or so, year and a half ago :P), and wouldn't try some, and D and C weren't home. A had some tho, and enjoyed it.
pss: i have A, B, C, D, and TJ and me...alphabets!

nachos :)
Browned 1 lb beef, add taco seasoning according to package, put on chips, cover with cheese, melt, add tomato, lettuce, whatever you like on your nachos :)
quick and easy dinner :)

I'm making food again!!!!
yes...i graduated from my class last night, gave a "report" on alzheimer's and took my final - which i got a 94% on. i'm excited! next step? taking the state test...but i have some paperwork to fill out first :(
but i'm making haitian mac'n'cheese tonight...recipe from my mom, not sure where she got it, other than haiti :P
you need:
16 oz cheese sauce
12 oz carnation milk
2 tsp garlic powder
8 oz cooked ziti or pasta of choice
Onion diced (opt)
green pepper diced (opt)
salt to taste
3 Tbsp tomato sauce
and then you:
Mix all ingredients together. Place in casserole dish and sprinkle with Parm cheese if desired. Bake at 325*F for 20-25 minutes or until bubbling and surface is golden brown.
and voila! you're done!!!
unless your oven is like mine, then you keep it in for a bit longer till it is done. :P

bubble up pizza
MODIFIED!!!! (i had to modify it...the last time i made it the "right" way, it didn't cook thoroughly :()
so i estimated everything i threw in...sorry!
I put some spaghetti sauce (roasted red pepper and garlic, you can put whatever kind you want tho!), cheese (i did mozzerella, you can do whatever you have on hand), and a 1/2 tsp of garlic, and pizza toppings (i did a can of mushrooms, drained (no real ones on hand, darn), pepperoni quartered, bacon bits, and part of an onion, roughly chopped.) in a bowl and mixed it up, adding more sauce so everything was neatly covered.
I then spread it in an 8x8 pan (not everyone in the house feels good, so i didn't make a 9x13 pans worth of food) and covered it with quartered refrigerator biscuits. i then sprinkled some Parmesan cheese on top, stuck it in a 350*F oven for about 30 minutes (or until golden brown) and put more Parmesan cheese on top when done.
Easy dinner, and a winner also!
PS the original recipe has the biscuit pieces throughout the sauce mixture, but they didn't cook that way, and noone ate it...so i mixed up the recipe and they cooked!
