Peanut Butter Banana Bread

Yet another recipe from dax phillips of simplecomfortfoods.  He's got some yummy looking food over there.  He did peanut butter banana bread and i thought it sounded yummy so I made a go at it.

I used his recipe and didn't change anything, so I'm going to copy and paste it at the bottom of the blog

ingredients NOTE: banana's are not fuzzy, they're defrosting.  I had to nuke them to get them defrosted faster...oops







mix your dry ingredients together.  you're supposed to sift them, but not owning a sifter, i combine them with a fork.  it still works out well.






cream shortening, sugar, eggs, and peanut butter.  smells wonderful.







rub butter on a loaf pan.








mash bananas.

Yum.









Add banana mash and flour mix to shortening/pb mix.  combine well







pour in loaf pan (that you buttered up earlier)








YUM! 




then get sad about the amount of dishes in your sink :(






Ingredients:

1 3/4 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/3 cup vegetable shortening
2 eggs, beaten
3/4 cup smooth peanut butter
2/3 cup granulated sugar
3 ripe bananas, mashed
1 tbsp unsalted butter


Preheat your oven to 350 degrees.
Begin by combining the flour, baking soda, baking power, and salt, and place in your sifter, and do just that, sift away, making a nice a light base for your batter. In your mixer, or bowl with hand beaters, cream the peanut butter, shortening, eggs and sugar. Continue beating and add in the flour mixture. Toss in the bananas, and do your final mix.
Take a bread pan, and rub the butter throughout the pan, making sure you get all sides. Spoon in batter, giving it a bit of a jiggle and make sure things are smooth, then toss in the oven, uncovered, for about 60 minutes, or until the center comes out nice and clean by doing the toothpick or knife test.
