had clinicals last night, but before hand, i went to aldi's and got the rest of my groceries - went over budget by $3, but i "made up" the money via popcans that i returned after class, so its all good. except my bank account is smaller :(
but i made white chicken chili today, put it in the crockpot to heat it up...i guess i coulda done it in the stock pot, but i don't know if its big enough, and they're both dirty...doesn't help :P
i cooked chicken breasts, about 3 or 4 of them, and shredded them with two forks (cuz they were boiling hot!) and put 1/2 jar med salsa, 1/2 jar mild salsa, 1 48oz jar randalls northern beans (white kind) (i'm sure you could soak your own; i'm not THAT ambitious...), mozz cheese, 1 tsp cumin and chicken broth. i do use the juice from the beans, and add broth as needed. i did add too much broth, but TJ was "ok" with it.
he said its to be added to the "keep" list...:D adding salsa instead of using individual items like jalapenos, tomatos, etc, saves LOTS of time :D
