Goulash

So for dinner tonight I made goulash, adapted from a recipe that I got HERE.

I changed it up a bit to suit my needs and what I had at home.

1 Tablespoon Oil
1/2 Onion, Chopped
4 cloves Garlic, Minced
1 pound Ground Beef
1 teaspoon Kosher Salt (or 1/2 Teaspoon Table Salt)
½ teaspoons Black Pepper
1 Green Bell Pepper, Chopped
1 Tablespoon Chili Powder
1 teaspoon Paprika
1 8 oz can Tomato Paste
2 fresh tomatoes, diced
½ teaspoons Kosher Salt (or 1/4 Teaspoon Table Salt), Or To Taste
¼ teaspoons Black Pepper
8 ounces, weight Macaroni Or Your Favorite Pasta Shape

Put a pot on the stove, with water, and start it to boil for the pasta.
Saute onion and garlic, add beef and pepper and salt, brown. Drain if needed.
Add bell pepper, chili powder, paprika, and some tomato paste to the beef, cook for a few minutes.
Add tomatoes, then stir to combine. cover, let come to a gentle simmer.
Add pasta to the water. Cook the pasta for two minutes less than it says on the box.
Continue to stir the meat mixture.
Once the pasta is done cooking, drain it and add it to the meat mixture. Stir to combine.
Add more tomato paste if desired. Let the mixture cook for 3-4 minutes. add Parmesan cheese if desired.
Serve :)

This dish served me and the boys with left overs. the green pepper was a good addition. I added more tomato paste because I like it a little saucy.

It was good, I'll make it again, but with changes to suit what I like - like maybe not that much onion, but you really couldn't taste it.

  1. I used to love Goulash as a kid. I've been trying to make a veggie version for a long time but it's never as good as I remember. :-)

  2. I've never heard of a veggie version...have you always been a vegetarian? you could probably use soy meat or tofu, i wouldn't know...
