muffins!

today at mom's i made apple muffins from tasty kitchen.

next time i'll use less than 3 cups of apples...i used jonagold apples, and finely minced/diced the apples (i don't like much apple) and it took 2 apples to get three cups...so i gave mom the other apples...

  • 1-¾ cup White Sugar
  • 2 whole Eggs
  • 1 cup Vegetable Oil
  • 1 Tablespoon Vanilla
  • 3 cups White Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 3 cups Cored, Peeled, And Diced Apples
  • ½ cups Brown Sugar

Preheat oven to 350ºF and line a muffin pan with paper liners.

Cream together sugar, eggs, oil, and vanilla until light and fluffy. Sift flour, baking soda, salt, and ground cinnamon into a bowl. Add dry ingredients to the creamed mixture and mix until combined. The batter will be very thick. Add the diced apples.

Fill paper liners almost to the top, about 3/4 full. Sprinkle with brown sugar.

Bake at 350ºF for 20–24 minutes. Makes 18 muffins.

they look great...but i haven't tried one yet...maybe tomorrow for breakfast...maybe. like i said...i dont' like apples. but the recipe/picture looked good/easy and i know my family likes apples :D
