White Chicken Chili

I know I've made this before, and I'm pretty sure I've put it up, but I can't seem to find it.  So, no links to last time.

Everytime I make white chicken chili it's different than the last.  Sometimes I add celery.  Sometimes I add rice.  Othertimes the spices are different.  This time is no different.

You start by adding 48oz of great northern beans (I use a big jar of randall's, or three 15 oz cans) into your crockpot.  Rinse the can/jar out 1/2 way, and add water.  Alternately, if you have some on hand, you can add chicken broth.  I didn't have any on hand so I used water.  You add some chicken (cooked, or not cooked, it'll cook in the crock pot), and some salsa.  If you wanna be cool, you can cut up a tomato, and an onion and add them, but I used salsa tonight.  Then I added seasonings.  I added a dash or two of cumin, herbes de provence, parsely, minced onion, basil and black pepper.  I also added 2-3 bay leaves.  What spices you use is totally up to you and what you have in your spice rack/cabnet.  I have an extensive spice array, so I use whatever I feel will work.  I hear that mint would work well also.  I'll have to try it next time.

After a bit of time, you pull the chicken out and shred it with two forks, and put it back in.  Also check your seasonings at this time.  TJ decided (since I made it up to him) that it needed a little something else so he added chili seasonings and said it was "perfect."  I'll have to admit, it was good.

We ate the entire pot tonight, no leftovers for tomorrow or next week. 

While the flavors are combining and the chicken is cooking you need to stir it occassionally.

This is what my finished product looked like.

After putting it in bowls to eat, I topped it with cheese, which melted.  You can also add croutons, which I currently have none of, it adds crunch. :D

more groceries?!

had clinicals last night, but before hand, i went to aldi's and got the rest of my groceries - went over budget by $3, but i "made up" the money via popcans that i returned after class, so its all good. except my bank account is smaller :(

but i made white chicken chili today, put it in the crockpot to heat it up...i guess i coulda done it in the stock pot, but i don't know if its big enough, and they're both dirty...doesn't help :P

i cooked chicken breasts, about 3 or 4 of them, and shredded them with two forks (cuz they were boiling hot!) and put 1/2 jar med salsa, 1/2 jar mild salsa, 1 48oz jar randalls northern beans (white kind) (i'm sure you could soak your own; i'm not THAT ambitious...), mozz cheese, 1 tsp cumin and chicken broth. i do use the juice from the beans, and add broth as needed. i did add too much broth, but TJ was "ok" with it.

he said its to be added to the "keep" list...:D adding salsa instead of using individual items like jalapenos, tomatos, etc, saves LOTS of time :D

grocery shopping

i'm still alive

haven't been cooking; been busy with class

but on the menu this week is clinicals and white chicken chili. i just need some salsa...theres some in the house, but its HOT and i like medium/mild :P

but i'm thawing chicken broth i had frozen for this...and i bought the beans, and i bought chicken (it was on sale; i had to rearrange the freezer).

but i went grocery shopping on monday. it was fun; if you can call it fun :P i keep my grocery list on my computer, and i delete the items as i buy them. works well, and it saves paper! w00t for being green. i'm sure some people wonder why theres a mini computer in my cart, (its one of those netbooks) but as i shopped after 9, noone stopped me, and (obviously) noone stole the computer :D

but i got over 80$ of groceries for sixty-some dollars. not bad...only meat in there is frozen chicken. i buy store brand (meijer!!!) or on sale only.

tomorrow or weds i'm going to aldi and getting the rest of my stuff...hopefully they'll have it all, they should. :D
