Beef enchiladas

So I was looking through my computer at recipes and wondering what to do for dinner when I came across mom's chicken enchiladas recipe.  I've made it once before but cannot find the post, musta not made one for it.  Anyway I took to scouring the internet (read: searching google) for beef enchilada recipes.  I did use my mom's sauce recipe, as I had everything in the house for it, and I didn't have the items for the other enchilada sauce.  :shrug:

So first you start off by browning the meat.  While the meat is browning you dice up zucchini and onion.








After browning meat, put it in a bowl and drain the fat from the pan.







Add a little bit of oil if needed and saute the zucchini and onion.







Make the sauce by dumping all the ingredients into a bowl.  I used a sauce pan.  You don't need to heat the items up, so the sauce pan was not necessary.  Oops.






Spread some sauce in the bottom of the 9x13 pan.








Assemble your enchiladas - tortilla with meat/zucchini mix, cheese and sauce, rolled up tight and placed in the 9x13 pan.  Pack them in there tight, no problem.






Spread remaining sauce mix on top, cover with alum foil, place in oven.








After 1/2 hour in a 350*F oven, take it out, uncover, and put cheese on top - as much as you want! Put it back in the oven for about 5 min, or until the cheese is melted.






Take out, and enjoy!  So yummy









I also boiled corn for 10-15 minutes until it was done and it was yummy also.  I should grill it next time....









Recipe for beef enchiladas:

1 lb ground beef
1.5 cups diced onion
1.5 cups diced zucchini
12 tortillas
enchilada sauce (recipe below)
cheese (whichever you prefer)

enchilada sauce:

small amount oil
couple shakes chopped onion (I took the easy way out and used dried.  You could certainly use a real onion...)
5-6 shakes chili powder
29 oz tomato sauce
1/2 c water


Preheat oven to 350*F.  Brown beef in pan on stove, drain, place in bowl.  In same pan, saute chopped onion and diced zucchini.  Add a bit of oil if needed, I didn't need it.  Make sauce.  Warm up tortillas if you wish, I use them cold.  Put the saute'd zucchini/onion mix in the bowl with the meat, mix.  Place a small amount of sauce in the bottom of the 9x13 pan and tilt to cover the whole pan.  Start assembling the enchiladas.  Take a tortilla, put some meat mixture on it, cover with cheese, cover with sauce, roll up and place in the pan.  Repeat for all of the meat mixture.  You will have sauce and cheese left over.  You may squish the enchiladas to get them to fit.  Pour the rest of the sauce mixture ontop of the enchiladas.  Cover the pan with foil and bake for 1/2 hour.  Take foil off, top with cheese and bake for another 5 minutes, or until cheese is melted.  Take out and eat.


To boil corn on the cob you shuck corn, take off silk strings, fill a pot with water, boil it, boil corn 10-20 minutes until its done to your likeness.  I had TJ check it, so I'm not sure what "done" corn feels like.

Goulash

Dinner on Monday was Goulash - I made it like what I've made before but a bit different.

I put a pot of water on to boil and got to prepping the rest of my food.  I had taken a pound of beef out of the freezer earlier in the day, so it was thawing on the counter.






Heat oil in a pan and put 1/2 onion and 4 cloves of garlic in there and saute them for a few minutes.  Add your pound of beef and some salt and pepper and brown your meat.  If it needs to be done, drain your beef of excess fats and oils.





Add paprika, chili seasoning, and tomato paste to the pan.  Stir to mix.







Add diced tomatoes and let come to a simmer.  Add your pasta to the boiling water and let boil for 2 minutes less than the cooking time.  When done being boiled drain the pasta.






Add your pasta to the mixture.  I added some pasta sauce (1/2 jar) to the mix as I had too much pasta and needed more sauce to cover the pasta with.

Let cook for 2-3 minutes, adding parmesan cheese to it at the end if so desired.

Eat!  Its a wonderful meal, rather cheap, and very filling.  TJ and I each got a plate/bowl out of it and TJ has lunch for work tomorrow also. :D

Olive oil, for frying
1/2 Onion, Chopped
4 cloves Garlic, Minced
1 pound Ground Beef
Salt
Pepper
1 Tablespoon Chili Powder
1 teaspoon Paprika
1 8 oz can Tomato Paste
2 fresh tomatoes, diced
Pasta of your choice, I used Penne Rigate
Pasta sauce, if you have too many noodles

Put a pot on the stove, with water, and start it to boil for the pasta.
Saute onion and garlic, add beef and pepper and salt, brown. Drain if needed.
Add spices and tomato paste to the beef, cook for a few minutes.
Add tomatoes, then stir to combine. Cover, let come to a gentle simmer.
Add pasta to the water. Cook the pasta for two minutes less than it says on the box.
Continue to stir the meat mixture.
Once the pasta is done cooking, drain it and add it to the meat mixture. Stir to combine.
Add some pasta sauce if desired. Let the mixture cook for 3-4 minutes. add Parmesan cheese if desired.

meatballs!

This is another recipe from my mother :D

2 eggs
2 c rolled oats
12 oz can evap milk
1 c onion chopped
2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
3 lbs lean ground beef

SAUCE:
2 c ketchup
1.5 c packed brown sugar
1/2 onion, chopped
1/2 tsp garlic powder

In a large bowl, beat eggs. Add oats, milk, onion, beef, salt, pepper, and garlic powder. Shape into 1 1/2" balls. Place meatballs into 2 9x13 pans. Bake at 375*F uncovered for 30 minutes. Remove from oven and drain. Place all of the meatballs into one pan.  In saucepan bring all sauce ingredients to a boil. Pour sauce over meatballs. Return to oven and bake uncovered for 20 min.

I only had 1 lb of beef, tho, so I made the recipe do.  It didn't taste quite as good, and i didn't do the balls next to each other, i had them spread apart, so the sauce didn't bake properly, so there was lots of "black" in my pan(s) and they didn't come up easily.  I soaked pans in baking soda and water over night, and ran them through the dishwasher.  I'll see how they fared then.  otherwise i'll be looking online on how to clean off stuck on food.  :/

They tasted great which is good :D

Next time i make them i'll actually do 3 lbs of beef and make them properly :D

stuffed peppers

I based this recipe off the one from How Sweet It Is. she has really good (looking) food. This is the first of her recipe's i have madeLink


4 red, green, orange or yellow peppers

1 pound ground beef

1/2 onion, chopped

3 garlic cloves, minced

3/4 cup parmesan cheese

1 29-ounce can of tomato sauce (I used 2 15 oz cans)

1/3 cup milk

1/3 cup basil

Preheat the oven to 400 degrees. Slice the tops off of the peppers and remove the ribs and seeds. Set aside.

In a skillet over medium heat, brown beef. Add chopped onion, sauteing until soft – about 5 minutes. Stir in 2 minced garlic cloves and cook for 1 minute. Stir occasionally.

Mix the tomato sauce with the milk and remaining garlic clove and heat it over low heat. Stir in almost all of the basil, reserving some for garnish.

Stir1/2 cup of parmesan cheese into chicken mixture, then add about 1/2 cup of tomato sauce in mixing to coat. (I had to use a bit more tomato sauce) Turn off heat. Divide the mixture evenly between the four peppers, stuffing them to the top. Place in a dish that allows the peppers to stand. Spoon a bit of tomato sauce over the tops, and pour the rest of the sauce into the bottom of the pan. Set the tops gently back on the peppers. Bake for 20 minutes, then cover with foil and bake for 30 more.


I also made corn (recipe below) and loaded casserole potatoes from betty crocker (in a box!)

Corn

add butter, corn, chili powder (as much as you want) and Parmesan cheese (as much as you used of the chili powder). Add some water. Microwave for 2-3 minutes, stir. microwave another 1-2 minutes if needed. serve.

pizza muffins

8 oz meat (beef, turkey, pork, etc ground up)
1.5 cups bisquick baking mix
1/4 c grated parm cheese
1 tsp italian or pizza seasoning
1 tsp dried parsley flakes
1 tsp dried onion flakes
1/4 c chopped green bell pepper
3/4 c chopped tomato
1/3 c shredded cheese (i used colby jack cuz thats what i had open)
1/3 c skim milk
1 egg
2 tsp veggie oil

preheat oven to 375*F. spray wells of muffin pan with cooking spray or use liners. in a large skillet, brown meat. set aside; let cool meanwhile in a large bowl, combine baking mix, parm cheese, pizza seasoning, parsley flakes, and onion flakes. stir in green pepper, tomato and cheese. in small bowl, combine milk, veg oil, and egg. mix well to combine. add to baking mix. mix gently to combine. fold in cooled meat. fill wells with mixture (full). bake 16-18 minutes till toothpick comes out clean. let cool.

EAT!!!!

if you're TJ, you smother with hot sauce, then eat.

notes: i also added mushrooms, fresh, de-stemmed. it was yummy.

nachos :)

Browned 1 lb beef, add taco seasoning according to package, put on chips, cover with cheese, melt, add tomato, lettuce, whatever you like on your nachos :)


quick and easy dinner :)

Almost stuffed peppers

Havent had much zest for life lately, been kinda depressed, however, i did make dinner tonight...i got the recipe from one of mom's cook books, i don't remember which...forgot to write it down. oops!

here's the recipe tho. turned out good.

1 lb ground beef
2 c water
1 14oz can diced tomatoes WITH JUICE
1 lg grn pepper, 1/4 in slices
1 med onion, thinly sliced
1.5 tsp salt
.5 tsp italian seasoning
.5 tsp pepper
1.5 c uncooked instant rice

lg skillet, cook beef over med heat, drain, remove, set aside and keep warm. in same skillet combine water, tomatos and juice, grn pepper, onion and seasonings; bring to a boil. Reduce heat; simmer, uncovered, until veggies are tender. Stir in rice; cover and remove from heat. let stand 5 min, stir in beef; return to heat and cook till heated through

next time, tho, i'll either use less onion (i only used 1/2) or i'll dice it up really small...i don't like eating onion. :D
