Breakfast Hash

So Jessica over at how sweet it is popped up on my facebook feed this AM with this wonderful recipe: Grilled corn summer breakfast hash.  However, since I don't have any grilled corn, nor was I going to run to the store, buy corn, and grill it, I decided to make this dish MY way :D  Its still totally inspired by Jessica tho :D

I'm using bacon bits and frozen corn, so I jump straight in with roasting the potatoes, instead of making the bacon.  Because there is no bacon fat, I use a small bit of olive oil.

Start roasting your potatoes.   Put them in your pan on the stove in some oil.  Cook for 8-10 minutes.  Your potatoes will start to turn brown and yummy.












Add your bell pepper and green onion.  It will start to smell really really good right now. Cook for 5 more minutes.










Add some cut up zucchini.  YUM!  Cook for another 5 minutes.

After cooking your mixture for another 5 minutes, turn off the heat and add your corn (I heated up my frozen corn) and bacon bits!
















Look at this!  Bacon, peppers, potatoes, zucchinin, onion, corn, all mixed into one meal!

I'm sure adding mushrooms woulda been good too; too bad I don't have any right now :(

Or if you're TJ, you scramble some egg in with it all and mix it up.

Too bad I don't like scrambled egg...










2.5 tablespoons of bacon bits
4 potatoes, chopped into cubes
1 small zucchini, chopped
1 tsp of pre-chopped garlic (2 tsp of garlic, minced)
1 yellow pepper chopped
1/2 red pepper, chopped
1 cup frozen corn, heated
1 tablespoon olive oil (you may not need this)
1 green onion, chopped
salt and pepper
Heat a skillet over medium heat. Add some oil, and add potatoes with a sprinkle of salt and pepper to the bacon fat and cook for 8-10 minutes, stirring and tossing every few minutes. 
Add peppers and onions (and another little sprinkle of salt and pepper) to potatoes and cook for another 5 minutes, stirring. At this time you may need to add more olive oil depending on how much oil is left. After 5 minutes, add in the zucchini and garlic and cook for 5 minutes more, stirring. Turn off heat, add in corn and bacon.

BLTs!

After my meeting at church today, I had to think up lunch, quickly.

So we decided on BLTs.  They're pretty easy to whip up. 

Brown your bacon








Put it on a plate lined with paper towel to drain any excess fat.  Once all the fat in the pan cools slightly you can pour it into a jar or container to collect it.  Don't pour fat/grease down the drain.





Take 2 slices of bread, toast them to appropriate color, slather with butter (or mayo, if you're of that sort).  Take pieces of lettuce, lay them on one side.





Put slices of tomato on your lettuce.





















Put bacon on top of tomato.  Eat a few pieces, also.








Put other piece of bread on top.








Enjoy.  So yummy.

QUICHE

While browsing simplecomfortfood I saw a recipe for quiche.  I knew then that it had been too long since I have had quiche (2-3 years, maybe) and that it would have to be dinner sometime soon.

So tonight I made quiche. 

I was lazy and took a roll of crescent rolls and pressed them into a pie plate.  I'm lazy and didn't feel like making a pie crust.  Or going to the store (its 90+ degrees) and buying a premade crust.  They don't fit properly, so you do have to rip them a bit and make them fit.  If you use a normal pie crust, you have to bake it for about 14 minutes at 375.




Chop up your potato(s) and add them to a pot of boiling water.  This was actually too many potatoes.







Chop up the rest of your veggies.  I used one stalk of green onion, part of a carrot, part of a orange pepper, celery, and bacon.  I realize bacon isn't a veggie, but I used bacon bits to be lazier.




 Put them in a pan with some olive oil, cook/saute till soft for a bit.







Put some cheese on the pie crust, and put your potatoes on top. 







put the rest of your veggies in there also.








In another bowl, beat 3 eggs, 1/2 cup of milk, dash of salt, dash of pepper, and dash of dried mustard.  Beat very well.  Pour into pie crust.  Put more cheese on top.






Put on cookie sheet covered with foil, as to catch any drips that may or may not happen.

Put in oven (375*F) for 35 minutes.





Let cool, cut, serve, eat.  Repeat as needed till full.  YUM!

1 cup of chopped up potatoes
1/4 c bacon bits
1/4 c chopped colored bell pepper (I used orange cuz its what I had on hand)
1/4 c chopped carrot
1/4 c green onion
1/4 c chopped celery
3 eggs
1/2 c milk
1 cup of cheese (anything you want!)
dash pepper
dash salt
dash dry mustard
Pie crust (or crescent rolls if you're like me)


Cook pie crust OR press crescent rolls into the pie plate.  If using crescent rolls, do not bake!  They puff up and are done and if you were to cook them again they'd burn and it wouldn't be tasty.  Trust me.

Cut up the potatoes into bite size chunks (skin on or off, doesn't matter).  Boil for about 7 minutes, or till a little over 1/2 done.

Saute your veggies and the bacon bits in a bit of oil in a pan.  cook till soft.

Beat your eggs and milk and spices until blended well.

Add a layer of cheese to bottom of pie crust. Add potatoes and veggies.  Pour eggs over top, top with another layer of cheese.  Put in oven (375*F) for 35 minutes or until cooked through.  Let cool a few minutes and eat.

making up food :)

So, we started out browning 1lb hamburger and 1 small onion, with about 3 cloves of minced garlic. also put a stock pot of water on to boil. made 2 boxes of mac'n'cheese, adding 2 cups of milk and about 3 TBSP of butter. also added about 1-1.5 cups of crumbled bacon (in a bag, from the store...so yummy!), various spices (as you wish, you may spice like you want :D), and shredded cheese. added it all together, it was yummy :)

TJ suggested calling it "cheeseburger macaroni" so there you have it :D

SNOW DAY

so we had a blizzard last night, about 16-20 inches of snow overnight, blowing, drifting, etc.

So because I couldn't go anywhere today, i decided to make a nice dinner, and then something sweet. Well, TJ got called in early to his second job, delivering pizza, so his dinner will be waiting for him when he gets off work. so my "nice dinner" didn't exactly work the way i wanted it to....putting me into a depression, but hey. i'll work though it, i think :P

I made meatloaf, a modified recipe from the pioneer woman. :) LOVE her recipes, but since i was only making for two people, not C and D, just TJ and I, i decided to half the recipe, hence the modifications :)

I also made cookie bars, but cuz i don't have a jelly roll pan, i halved the recipe (a bit of a theme here...) and put them in an 8x8 pan...they took a lil longer to bake, cuz they're thicker, but they still look good :)

the recipe for the cookie bars is:

Cookie Bars


1 c butter/marg
3/4 c sugar
3/4 c brown sugar
2 eggs
1 tsp vanilla
2 1/4 c flour
1 tsp salt
1 tsp baking soda
12 oz bag choc chips

Mix together as for cookies. Spread batter in a
greased 10x15 jelly roll pan. Bake at 375*F for
15-20 min or until golden brown.

Thats the full recipe, obviously.

and the meatballs:

Meatloaf:
1 cup Whole Milk
6 slices White Bread
2 pounds Ground Beef
1 cup (heaping) Freshly Grated Parmesan Cheese
¼ teaspoons Seasoned Salt
¾ teaspoons Salt
Freshly Ground Black Pepper
⅓ cups Minced Flat-leaf Parsley
4 whole Eggs Beaten
10 slices Thin/regular Bacon
Sauce:
1-½ cup Ketchup
⅓ cups Brown Sugar
1 teaspoon Dry Mustard
Tabasco To Taste

Preparation Instructions

Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.

Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.

With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)

Lay bacon slices over the top, tucking them underneath the meatloaf.

Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.

Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.


Because i halved the recipe, i used half strips of bacon, then fried the rest of the bacon up...YUMMY bacon covered meatloaf is amazing. I made this recipe the first week i moved into this house...its still yummy! now i'm just waiting to get hungry so i can eat it!!!! :P
